Why did my Gigabit link drop to 100Mbps after I added the coupler?

That strongly suggests checking conductor continuity and contact quality. Gigabit Ethernet uses all four pairs, whereas a 100Mbps link can operate using only two pairs.

A damaged plug, poor contact, faulty cable or faulty coupler can therefore leave enough working conductors for 100Mbps while preventing Gigabit negotiation.
