Should I use the Cat3 coupler in a Cat5e or Cat6 network?

Not if you are trying to preserve Cat5e or Cat6 channel performance. The connector will physically mate with the RJ45 plugs, but the coupler itself is rated Cat3.

Choose a coupler whose category is at least appropriate for the channel you are building.
