How much of the twisted pair should I untwist before termination?

Only as much as you need to place the conductors into their IDC positions. Keep the twists as close to the termination as practical.

Untwisting a long, beautifully straight fan of conductors may look organised, but those twists are part of the cable's crosstalk performance.
