How much should I untwist the pairs when I terminate the cable?

As little as practical. Keep each pair twisted until it is close to its IDC positions, then separate only what you need to dress and punch the conductors down.

Do not comb several centimetres of every pair dead straight because it looks tidy. The twists are part of how the cable controls crosstalk.
